Avocado Veggie Wrap
Avocados are ready, in season and ready to use in whatever variety meal you like to create. An Avocado Veggie Wrap is just one way to enjoy them. I happen to really enjoy them. They add great flavor to a smoothie, salad, soups, vegetable dishes and of course guacamole.
This is the time of year that they are affordable and ripe. Take advantage of it. If you have not tried avocados before buy one and add a little to your meal. They are very healthy for you. They are full of nutrients. There are several varieties of Avocados, however, the most popular in our area are the Haas Avocado. They are the fruit of the avocado tree.
Avocados contain many vitamins including Vitamin K, Folate, Potassium, Vitamin E, Vitamin B5 and B6 as well as Vitamin C. They also contain a small amount of Magnesium, Iron, Zinc, Vitamin A, Manganese, Copper, Vitamin B1, B2, and B3.
Many people shy away because one avocado has 160 calories. It is good to know that avocados contain 2 grams of protein and 15 grams of healthy fats. You know the ones they say are good for your health, monounsaturated fatty acids.
With all these great benefits it’s definitely worth giving them a try.
Today’s recipe will be a tasty Avocado Veggie Wrap. I am absolutely in love with this sandwich. I eat this once or twice a week!
Let’s get started on making a great lunch or dinner for yourself.
Your Recipe
Ingredients:
- 1/2 Avocado, sliced
- 1/2 Carrot, sliced into small slivers
- 1/4 Cucumber, sliced into small slivers
- 1/4 cup Spinach, sliced into slivers
- 1 Slice Red Onion
- Olive Oil
- Fresh Oregano, Basil and Parsley
- 1/2 Brown Rice Wrap
Directions:
- Warm the Brown Rice Wrap in a skillet on medium. This only takes a few seconds on each side.
- Layer the Avocado, carrot, cucumber, spinach and red onion on half of the wrap.
- Drizzle with Olive Oil.
- Sprinkle on Fresh oregano, basil and parsley.
- Fold over and enjoy!
I had fresh blueberries with mine today. Yum!
