Juicing with Beets. Great way to eat them.

Juicing with beets a great way to eat them?  This was something about to be explored.  As clear as day I remember when I was young I hated beets!!!  Certainly there had to be a better way.  I am quite sure it was due to the fact that my mom served them from a can. However, I can remember that my mom would pop them into a pan and heat them up or serve them cold.  Ooooh, just thinking about it makes me cringe.  Basically she did nothing to them.  They were very pretty to look at though.

I wanted to like them, just couldn’t do it.  Yuck!  They may be perfectly fine from a can, but for me they tasted terrible.  For me I  did not like the way they tasted or the texture.  Not a big fan of canned vegetables anyways, but that is a personal thing with me.  To this day I still will not eat beets from a can.  No way, never, won’t even attempt it. But, what about juicing with beets.  Perhaps this would be a great way to eat them.

Not eating a vegetable was pretty rare for me from an early age.  Vegetables were just something I always gravitated towards.  During that time I even became a vegetarian around the age of 9 or 10.  Meat and the thought of hurting animals just didn’t seem right to me.   

 

Juicing with Beets a Powerhouse of Nutrients

Beets really are a powerhouse of nutrients.  Even though they are a bit high on the carbohydrate end they have great benefits.  In addition a cup of beets is only about 60 calories and they are a great source of potassium, fiber, copper, magnesium, Vitamin B6, iron, phosphorus, manganese and Vitamin C. They have antioxidants and carotenoids as well.

Some say that beets may have some health which may include:

  • High in antioxidants
  • Relieve inflammation
  • Support digestive system
  • Assist with detoxification
  • Brain Health

You’ve seen the ads and studies I’m sure.  For example, juicing them provides you the opportunity to mix your fruits and vegetables with a whole variety of other fruits and vegetables.  Don’t be afraid to get creative and see what combinations you come up with. If you are not very creative you can google different vegetables and get some ideas.  I have included a recipe for you to try below.

Most of us could improve the amount of nutrients we take into our bodies, maybe you can try adding beets to some of your recipes. 

My adventure with beets.

My adventure of being a vegetarian continued for many, many years, so not liking a vegetable was out of the norm.  However, I loved the fresh, vibrant colors of vegetables.  The different tastes, creations you could make, so bountiful. Meanwhile, I digress, back to the beets.

Beets do have a distinctive flavor, but I wanted nothing to do with them.  I can’t tell you how many times my mom would serve these.  Actually kind of funny when I think back to it.  For the most part my mom was a very good cook.  Not sure what happened with the ol’ beets though.  She never could figure out why I did not like them.  Just one of those things.

Fast forward to being an adult.  I decided to give beets another shot, however, certainly was not going to try them out of a can though.  No way!

I’ll admit, they are not my favorite but I do like them as long as they are fresh and I can create something with them.  For instance, I will add them to salads or some other dishes I make.   One of the best ways I find to add in some of the vegetables you are not a fan of is by juicing them.

Perhaps you could try this recipe.  Juicing with beets is a great way to eat them.  I would love to know what you think of this Beet Juice recipe.

Ingredients:

  • 1 Beet, peeled and cut into quarters
  • 1 medium size Green Apple, quartered
  • 1 tsp of Ginger
  • 1/2 of English Cucumber, quartered
  • 1 tsp of Lemon Juice
  • 1/4 to 1/2 cup of water

Directions:

Personally I use a Magic Bullet for my juicing, however you can use your favorite juicer or blender as well.  Place all items into the juicer until well blended. After that if the consistency is too thick add  a little more water and blend to desired consistency.  If there is too much pulp for you, you can always strain it and then drink the juice.
