Gluten-Free, Nut-Free, Vegan Oatmeal Cookies 🍪

These soft, chewy oatmeal cookies are totally gluten-free, nut-free, and vegan, making them the perfect treat for everyone! They’re naturally sweetened, packed with fiber, and super easy to make—no fancy ingredients required.

Ingredients (Makes 12 Cookies)

🥣 1 ½ cups certified gluten-free rolled oats
🌾 ¾ cup gluten-free oat flour (or blend oats into a fine flour)
🍌 1 ripe banana, mashed (or ¼ cup unsweetened applesauce)
🌿 ⅓ cup coconut oil (or melted vegan butter)
🍯 ¼ cup maple syrup or agave nectar
🌱 1 teaspoon vanilla extract
🧂 ½ teaspoon cinnamon
¼ teaspoon salt
🛑 ½ teaspoon baking soda
🍫 ½ cup dairy-free chocolate chips, carob chip or raisins (optional but delicious!)

Instructions

1️⃣ Preheat & Prep – Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

2️⃣ Mix Wet Ingredients – In a large bowl, mash the banana and mix in melted coconut oil, maple syrup, and vanilla extract.

3️⃣ Combine Dry Ingredients – In another bowl, whisk together oats, oat flour, cinnamon, salt, and baking soda.

4️⃣ Mix It Up – Gradually add the dry ingredients to the wet ingredients, stirring until combined. Fold in chocolate chips, carob chips  or raisins if using.

5️⃣ Scoop & Shape – Using a spoon or cookie scoop, drop dough onto the lined baking sheet and gently flatten each cookie.

6️⃣ Bake – Bake for 10-12 minutes until the edges are golden brown. Let cool for a few minutes before enjoying!

Bonus Tip: Store leftovers in an airtight container for up to 5 days—or freeze for a longer-lasting treat!
